OK I'm thinking I'm making a bit of progress lol
I manually did a sudo apt-get update and upgrade which asked me about the php7.0 config, I opted for Y. The pi was already on 4.14.52+, is this the latest stretch!?
Then I deleted the mosbuild directory and restarted the build process, so far it's got to step 4.......keeping everything crossed
