even it is a little bit late to give you some more Informations about your Problem, i will try it.
I am Using moode for Years now in my car, and it works perfect.
But i was running in the same issue like you in the past years.
With some new Version of Raspian (i think, moode itself is not the Problem), the boot time starts to go up.
But one Point you have to look at, in the car you have possible only running wlan.
In this case the boot time is going up to 90 sec.
In all my tests, i fugured out, that with lan connection, the boot time is somwhere between 30-40 sec.
Even when you disable the wait for lan in moode, the boot time is way to long.
What i did was realy simple, i used a small wlan router from TP-Link, connectet to the lan Port of the Pi.
Disabled Wlan on the Pi and now i have Wlan and acceptable boot time.

Sorry for the super late reply. That is great. I know the Wlan certainly takes time to boot. Can I ask what wireless router you are using and how you are powering it.
