It is to be expected, as the i2s thing was never thought to be used among (between, TBH) devices, but only on-board, between (among?) chips.
So a standard pinout for a cable, such as an hdmi one, was never thought in the first place, because it was not the use-case the interface was meant to use.
Annoying, I know, but... it is what it is.
A good thing is, that some manufacturers do provide their pinout, so that you may have a choice to get it working, more or less out-of-the-box.
