OK, I have rebooted but it won't go past the login prompt. This time I am not being impatient (it's been over 10 mins). I have no idea where to go now that I can't boot to Moode at all.

Do you have a local display? If yes (as I would assume) what type is it? (as in the configuration it looks like it is undetected - neither type 1, nor type 2, shall it be an official Raspberry Display). Furthermore, its video out is still set to HDMI... is this the case?
Connect to moOde by means of your browser, change the settings accordingly, verify the whole thing, and then, eventually, come back with more information- about what you did, or did not, do.

I was so fixated on getting it to work on the local display, that I completely forgot about using the browser, which is where I started this entire thread!
I think the word you're searching for is - DUMB - and I would certainly agree!

Anyway, I have now Installed the DAC+ driver, selected 'Raspberry Pi DAC+' in the Output device list and reset 'Integrated Audio' to 'Kernel Mode' and, lo and behold, it all works OK.

One further question on a different topic.
Is it possible to use a bluetooth mouse?
I have managed to pair/connect a mouse but when I click on 'Home' I get  'Bluetooth Active' screen with a 'Bluetooth Control' and 'Audio info' buttons which, I assume, is about bluetooth Playback devices. The mouse still works, but there is no way to play anything. Also, the mouse needs to be reconnected after a reboot.
It would seem that the bluetooth settings are all about Playback devices.
It's not a deal-breaker but it would be nice to be able to use a wireless mouse.
